Barbecued Chicken Skewers

Barbecued Chicken is a grilling classic. This tasty version is both healthy and delicious. The homemade barbecue sauce is super easy to make and adds so much flavor to the dish. I like to paint some on the chicken half way through the cooking process and use the rest for dipping sauce. This dish is great for entertaining and family dinners alike. The skewers taste even better when grilled on a wood fired Texas style barbecue with soaked wood chips to enhance the smoky flavor of the barbecue sauce. If you are using a gas grill, that is great too. Just follow the instructions on the wood chip package if you choose to use them with a gas grill. This dish is loved by adults and children alike, so cook some up for your next family dinner or cook out. They are a real summer treat!

Ingredients

  • 2 lbs boneless skinless chicken breast (preferably free range organic)
  • 2 t Avocado oil
  • 1/2 lemon (juiced)
  • 1 t sea salt
  • 2 t Freshly ground black pepper
  • app. 16 bamboo skewers (soaked in cool water for 15-20 min.)

For the Barbecue Sauce

  • 1 T Tomato Paste (Preferably Organic)
  • 1 1/2 cups organic ketchup
  • 34 T tamari
  • 1 T liquid smoke
  • 1 T Sriracha
  • 1 T garlic powder
  • dash balsamic vinegar
  • 2 t Ancho Chili Powder
  • 2 t Smoked Paprika
  • 1/2 t honey

Instructions

  1. Preheat your barbecue grill according to the user’s manual to achieve indirect heat of about 300℉.
  2. On a clean cutting board carefully slice the chicken breasts into strips approximately 1/2 inch wide.
  3. Once all the chicken is sliced, carefully skewer one piece of chicken onto each skewer.
  4. Arrange the skewered chicken in one layer on a large dish or tray.
  5. Drizzle the chicken with the avocado oil, lemon juice and sprinkle the salt and pepper over the top of the chicken.
  6. Once your barbecue is ready, carefully arrange the skewers on the grill in one single layer making sure they are over indirect heat or they will char easily.
  7. Cook the chicken for approximately 7 or 8 minutes on the first side until half way cooked.
  8. Once the chicken is cooked half way, carefully turn the skewers so that the uncooked side is now down and the cooked side is up.
  9. Carefully paint the cooked side of each chicken skewer with a small amount of barbecue sauce from the small bowl using a long handled sauce brush.
  10. Once all of the chicken has been brushed with barbecue sauce from the small bowl, continue cooking the chicken for approximately 7 more minutes or until the chicken is cooked through.
  11. Once all the chicken is cooked through, carefully remove the chicken skewers from the grill and arrange them on a clean serving dish.
  12. Discard any remaining sauce from the small bowl.
  13. Serve the cooked chicken skewers with some of the sauce that you reserved for dipping.
  14. These skewers are great hot or at room temperature.
  15. Enjoy!

For the Barbecue Sauce

  1. In a medium sized bowl, combine all of the ingredients and stir well until combined.
  2. Fill a small bowl with some of the barbecue sauce to be used during grilling the chicken.
  3. Set the small bowl aside until you are ready to cook the chicken.
  4. Reserve the remaining BBQ sauce to serve as dipping sauce with the cooked skewers.
  5. Any extra BBQ sauce that was NOT used during the chicken cooking process may be stored in an airtight container in the refrigerator for up to 1 week.

When cooking any protein or vegetables with barbecue sauce, it is best to allow the protein or vegetables to cook half way prior to brushing them with any barbecue sauce. This will prevent the sauce from burning during the grilling process.
