Colorful Rainbow Carrot Salad

This crunchy fresh salad is a celebration of natures simple gifts. It is colorful and flavorful, but also very simple. Enjoy this salad as a great lunch or beautiful accompaniment to any meal. Paired with your favorite protein it makes a complete meal of its own. Rainbow carrots are the star ingredient in this salad because of their beautiful colors and truly sublime carrot flavor. If you cannot find rainbow carrots in your local grocery or farmer’s market you can certainly use fresh regular carrots instead.

Ingredients

Scale
  • 1 bunch rainbow carrots (tops removed, peeled and thinly sliced)
  • 1 bunch Italian parsley (leaves only, chopped)
  • 1/4 jicama (peeled and chopped)
  • 2 large red radishes (trimmed and thinly sliced)

Dressing

  • 1/4 cup olive oil
  • 1 T balsamic vinegar (fine aged)
  • salt and pepper (to taste)

Instructions

  1. In a large bowl, combine the parsley, carrots, jicama, and radish.
  2. Toss the salad ingredients together.
  3. In a separate small bowl, combine the dressing ingredients and whisk until the oil and vinegar are emulsified.
  4. Pour the dressing over the salad and toss lightly.
  5. Serve and enjoy!
