Grain Free Banana Bread

This banana bread is not only tender and satisfying, it is very fresh and tasty. You will not miss the grains as the almond flour provides a wonderful texture and flavor. Shh…don’t tell my kids the flour is gone…they gobble it up and can’t tell the difference. They think it is my traditional banana bread! It is sweetened by the ripe bananas and just a little honey to make it just sweet enough. Instead of butter, I use coconut oil in this healthy banana bread recipe because like butter it is solid at room temperature and creams very well like butter does. This banana bread is also more filling than traditional banana bread as the almond flour is loaded with protein and fiber. Ingredients

Scale
  • 2 1/2 cups Almond Meal or Almond Flour
  • 2 cups ripe bananas (peeled and mashed)
  • 3 eggs
  • 1/4 cup coconut oil
  • 1 T honey
  • 1 t vanilla extract
  • 1/4 t Salt (fine)
  • 1 t baking powder
  • 1/2 t cloves
  • 2 t cinnamon

Topping

  • 1/4 cup almonds (sliced)
  • 2 t honey (preferably organic)

Instructions

  1. Preheat your oven to 350℉.
  2. In the bowl of an electric mixer cream the coconut oil and the honey together until well mixed. Then add the bananas and vanilla and mix thoroughly. Add one egg at a time and mix until each is fully incorporated. Stop the mixer and scrape down the sides of the bowl if necessary.
  3. In a separate bowl, combine the almond meal, baking powder, salt and spices. Whisk the dry ingredients together until well combined and there are no lumps. Add the dry ingredients to the wet ingredients in the mixer bowl. Mix until all the ingredients together until well incorporated. Transfer the batter to the prepared loaf pan and sprinkle the almonds down the center of the top of the loaf. Drizzle the top of the almonds with the agave nectar.
  4. Place the loaf pan in the center of the top rack of the the oven and bake until a skewer inserted in the center comes out clean. Approximately 55 minutes to 1 hour.
  5. Cool completely and then run a paring knife around the outside edge of the loaf to release it from the pan. Slice the loaf and serve. Enjoy!
