Restaurant Style Salmon

Many people are very intimidated by the idea of cooking fish at home. They are not sure how to cook it so they don’t even try. I’m here to show you how easy it is to prepare a beautiful fish dinner at home. The first step is to find the right fish. For this dish I chose wild caught Alaskan king salmon. This restaurant style salmon is seared and then finished in the oven which produces a delicious piece of fish with relatively little effort. Once you learn this technique used in the finest restaurants, you will confidently be cooking fish at home. This technique is best for thicker filets of fish and is best with skin on fish. The fat gets fully rendered in the cooking process so the skin becomes crunchy and delicious. Just like bacon from the sea! This restaurant style salmon is served with stir fried veggies, but feel free to pair it with any veggie or starch options you choose. Ingredients

Scale
  • 1 3/42 pounds King Salmon (preferably wild caught Alaskan)
  • 2 tsp Avocado oil (*see link: “getting the most from your cooking oils”)
  • to taste kosher or course sea salt
  • to taste freshly ground pepper

For the veggies

  • 1/21 pound broccoli florets (preferably organic)
  • 1 bunch fresh spinach (trimmed, preferably organic)
  • 1/2 pound Shiitake mushrooms (sliced, preferably organic)
  • 2 tsp sesame oil
  • 1/2 cup coconut water
  • 3 tbsp tamari or coconut aminos
  • 1 tbsp rice wine vinegar
  • 2 tsp ground or fresh ginger
  • 3 cloves Garlic (thinly sliced)

Instructions

  1. Preheat your oven to 400 degrees F.

    Carefully cut the salmon into 4-6 equal portions (or ask your fish monger at the market to do it for you when you purchase the fish. This is a free service they provide). Season the fish with salt and pepper.

    Set a large oven proof skillet over medium high heat. Add the avocado oil or other high heat cooking oil to the pan and let it warm up a bit. Add the fish filets to the pan skin side down and cook for 2 minutes.

  2. Carefully turn the fish filets over to the other side so that the skin side is now up. Cook for another two minutes on the stove top and then transfer the pan to your preheated oven.
  3. Cook the fish in the oven for 10-15 minutes (10 min for medium, and 15 for medium well). Then using a good oven mitt, carefully remove the pan from the oven and let it rest on a cool surface on your stove top for 5 minutes or so.

For the Veggies

  1. While the salmon is in the oven, start cooking the veggies…
    Set a large wok or sauté pan over medium high heat. Add the sesame oil to the pan and let it heat up a bit. Then add the ginger, garlic and mushrooms to the pan. Keep them moving so the garlic does not burn. Cook for about two minutes and then add the broccoli and the liquid ingredients, to the pan. Continue cooking the veggies for about two minutes longer and then add the spinach to the pan. Continue cooking for another two minutes. Once the veggies are nicely stir fried you are ready to plate up the dish. Add some veggies to each plate and then set a piece of salmon off set on top of the veggies on each plate. Spoon some of the sauce from the veggies over the top of the vegetables and salmon. Serve immediately. Enjoy!
