Super Bowl Sunday is a great excuse to invite family and friends over for some football watching fun. Traditionally, most Super Bowl food is not what you’d consider healthy, but that doesn’t mean that you have to throw all of your healthy eating goals out the window during the big game. To help you feed your guests a delicious meal that they will have no idea is also healthy for them, I’ve compiled an array of healthful, tasty and festive recipes to make your Super Bowl food a touchdown. Many of these recipes have “make ahead” elements, and some can be made a few days in advance of the big game to make party planning easier and leave less work on the day of the game.

What is a Super Bowl party without nachos anyway?  They are loaded with yummy seasoned black beans that are spiced up using Marla’s Mexican Rub. I make my own chips using the recipe for Crispy Corn Chips, however you can use store bought chips too. My pineapple tomatillo salsa is a great compliment to the nachos and is super easy to make. This is a great “make ahead” recipe because as it sits in the fridge before serving the flavor becomes more intense and delicious.

In addition to the nachos, here are some great suggestions for other finger foods to serve…my Barbecued Chicken Skewers are slathered in a healthy, smoky and savory homemade barbecue sauce.  The barbecue sauce can be make a few days ahead of the party as well and the flavor is even better after a few days in the fridge. My Asian Flavors Chicken Burgers can easily be served as sliders by making small patties and serving them in small lettuce cups or on mini hamburger buns. The same is true for my lettuce wraps, they can be served in mini lettuce cups to make the dish go farther by serving appetizer size portions. These lettuce wraps are bursting with bright flavors of ginger and fresh herbs; your guests are sure to gobble them up and ask for more! One thing that goes really well with my lettuce wraps are roasted shiitake mushrooms; these scrumptious morsels are satisfying and delicious. They are perfect healthy finger food. My summer rolls with mango and mint are summer rolls with mango and mintrefreshing and tasty. If mango and mint are not your favorite, you can fill them with any fresh raw veggies, herbs and cooked protein that you like. You can make these summer rolls ahead of time and store them in the refrigerator covered with a damp cloth or paper towel until you are ready to serve them.  My fresh & quick hummus is easy and fast. I love this hummus recipe as it has the right balance of tangy flavor and creamy texture to satisfy any party goer. Serve it up with a tray of freshly cut veggies, and it will be a hit.
